What is Panela sugar?
Panela sugar is an unrefined whole cane sugar. It is a solid form of sucrose obtained by boiling and evaporating sugarcane juice. In Mexico, they call this cane sugar "piloncillo" because of the traditional form in which this smoky, caramelized and earthy sugar is produced. The juice is made from ground sugar cane, collected, boiled and poured into molds, where it hardens into blocks.
