Details

Winter Savory is an organic dried herb with a warm, peppery character. The cut leaves deliver consistent aroma and depth in day-to-day cooking and production batches, from catering kitchens to retail and food manufacturing.

Winter Savory (Satureja montana) for consistent flavour

Winter savory comes from the perennial herb Satureja montana, a woody subshrub native to the Mediterranean. The leaves are picked just before flowering, when aroma peaks, then gently dried and cut to size for even dispersion in blends and recipes.

Naturally rich in spicy, thyme-like notes with hints of marjoram and mint, winter savory is fuller and a touch sharper than summer savory. The careful low-temperature drying preserves essential oils and ensures a stable, repeatable flavour profile in larger batches.

Use and applications

Use winter savory to round out stews, braises and creamy sauces, and to lift bean and lentil dishes where its peppery profile really shines. It works well in herb blends (e.g., herbes de Provence), rubs for poultry and pork, marinades, stuffings, pickling brines and compound butters. It complements thyme, rosemary, bay, garlic and onion, great for roasted vegetables, eggs and mild cheeses.

Dosage & prep: as a guide, use ½–1 tsp per 4 portions (or per 250 g beans). Crumble between fingers and bloom briefly in warm oil/butter, or add early in slow cooking for a deeper release of aroma; finish with a small pinch at the end for freshness. Storage: keep airtight and away from light for best flavour retention.
