Flour and whole flour are two products that are both made by grinding grains. Yet they are different.
Whole flour is created by grinding grains. It can be used as a binding agent or as an ingredient in baked goods, such as brown bread, wholemeal bread or pancakes. Whole flour has a coarse structure and you can still see bran and germ in it.
Flour is created when, after milling, you sift the whole flour to remove the bran and the germs. Flour is used to make white bread, cakes and pasta.

Are there varieties of wheat flour?
Yes there are! The different types of wheat flour are determined by the amount of gluten present in the final product. Gluten is a protein that occurs in wheat and gives dough its structure and elasticity. More gluten makes the dough lighter (bread), less gluten makes the dough firmer (pastry).
