What is Tellicherry pepper?
This noble rare pepper comes from the Periyar Wildlife Sanctuary in the Indian state of Kerala on the Malabar Coast and is named after the port city of Tellicherry (Thalassery). The flavour of the pepper berries, harvested almost at maturity, is highly aromatic and slightly sharper than ordinary black pepper. Only small quantities of the best crops of this quality are processed into Tellicherry pepper each year. The colour is reddish brown rather than black, which is because the berries are harvested only after relatively long ripening. For this reason, the pepper is often referred to as the late-harvest pepper. The tellicherry pepper is more intense, nutty and warm in flavour than the ordinary black pepper.
