History of the Potato

The potato was brought to Europe from South America by Spanish explorers. To extract the starch the potatoes are ground, grated (releasing the starch grains), separated and dried into powder. Unlike corn and wheat starch, potato starch contains little protein and fat.

Applications of potato starch

In the food industry, potato starch is used, among other things, in Asian cuisine for binding noodles and sauces. Manufacturers also use potato starch for the production of wine gums, nuts and chips and as a binding agent in bakery products.
