What is Horseradish?
The horseradish (Armoracia rusticana, synonym: Cochlearia armoracia) is a plant of the cruciferous family (Brassicaceae). The plant has a white taproot known as horseradish. The plant has an original distribution from south-eastern Europe to western Asia and grew on river banks. The plant has spread further across Europe, the United States, Japan and New Zealand through its use as a garden plant.
The Uses of Horseradish
Horseradish is grated releasing a volatile compound, allylisothiocyanate, which has a sharp, mustard-like taste, similar to that of Wasabi. Horseradish is often processed in sauces and creams.
Healthy properties Horseradish
One tablespoon of horseradish puree contains 25 joules, 1.4 grams of carbohydrates, 14 mg of sodium, 44 mg of potassium, 9 mg of calcium and 5 mg of phosphorus. It also contains a lot of Vitamin C.
Horseradish over-consumption can cause painful urination. In limited quantities it is generally considered safe.
