Maize flour is a flour with a yellowish colour, which comes from ground and dried maize. The grinding is done with a hammer mill. This corn flour comes from the Netherlands and can be used to make your own bread, chips, corn porridge or tacos. Corn flour can also be used as an ingredient in cow feed. You cannot bake bread with maize flour because of the low amount of gluten. Therefore the bread can not rise and keep its shape.
Information about maize
Corn is a grain originating from Central America and belongs to the grass family. The corn kernel has a high starch content and, compared to other cereals, contains a lot of fat and is therefore very high in energy. It was domesticated 10,000 years ago by indigenous people from southern Mexico. In many parts of the world, maize is part of the staple diet.
Differences between corn flour and cornstarch
Corn flour is made by grinding the whole corn kernel. Corn starch (maizena) is made from only the starch from the corn kernel. Corn starch therefore does not contain any proteins or fats.
