Where does our Cacao come from?
The cacao trees from which cacao powder is made originated in South America. Our organic cacao powder also comes from there, from Peru to be precise. Cacao trees (Theobroma) produce pods that are about 15 to 25 cm long. Each pod contains around 20 to 40 cocoa beans in a kind of pulp.
The pods are opened and emptied after harvesting. Then the removed paste is put in the sun for several days to ferment. After this drying process, the beans are broken into small pieces and their husks are removed in a disc mill. These pure cacao pieces can then be ground into a fine paste. The cacao paste is sieved in order to separate the remaining pieces from the butter. The remaining pieces are the last step ground into a dark cacao powder.
Alkaline Cacao
Alkaline cacao is also called Dutch cacao, because this process is done in many in the Netherlands.In this process, the natural cacao is washed with a potassium carbonate solution, which ensures that the acid in the cacao is neutralized. This makes the cacao always dark brown and it does not vary in colour or taste.
Dutch (alkalised) cacao is different from the cacao known in other countries, this is why alkalised cacao is also called "Dutch cacao" in America. Alkalising the cacao was discovered in 1828 by Coenraad van Houten and further perfected around 1900. The process makes the flavour softer and more intense.
Use of Alkalised Cacao Powder
Cacao powder is great for making chocolate and chocolate milk. In addition, dark cacao powder is also used in many desserts as an ingredient or topping.
