Unroasted Soya Flour
Soya flour can be made in two ways. The first way is to roast the beans, remove the hulls and then grind them into powder. The second way is to grind the whole beans, unprocessed, into flour. Both types can be used in all kinds of baking products such as biscuits, cakes, pizza and bread. Unroasted soy flour is slightly coarser in structure.
Lecithin
Soy flour contains high levels of lecithin. Lecithin ensures that fat and water bind better. And that helps increase the quality of the dough.
Applications
Add soy flour to cakes, biscuits pastries and bread. It is gluten free. It is also great to add to other flours such as wheat flour. It gives the dough extra nutritional value because of the proteins in soy flour and it prevents spoilage.
