The ramson (Allium ursinum) is a plant in the daffodil family. The oval leaves are 3 to 5 centimetres wide, dark green and parallel-nerved. The flowers of the plant have six white petals and are grouped in loose, globular umbels. The plant occurs in almost all of Europe, with the exception of the Mediterranean region. The ramson grows preferably in shady deciduous forests with a humus-rich, moist, calcareous soil.

The plant blooms from April to June, sometimes until July. After July, the above-ground part of the plant disappears completely and only the underground flower bulb remains. After harvesting, the good qualities of the wild garlic are concentrated and processed into ramson powder.
Use of Ramson Powder
The taste of ramson powder is between mild chives and strong garlic. It has a huge popularity in Germany. They use it in soups and salads, with vegetables and under cottage cheese and plain cheese. With a little olive oil, it is also very suitable for use in pesto, instead of basil. Or use ramson in aioli and vinaigrettes.
