Origin of Olive Oil

Olive oil is a vegetable-based oil that is extracted by pressing from olives, the fruit of the olive tree. Mankind has known about olive oil for a very long time; the oldest records show that it was used as early as 4000 years before the beginning of our calendar. Around 1200 BC, the Phoenicians brought the olive tree to Italy. Olive oil is mainly used in food preparation.

The organic olives are picked by hand and placed in boxes. They are then processed in an olive mill. First, the olives are sieved (removal of dust, branches, leaves and heavy objects), then they are washed with cold water (removal of sand and foreign matter) and transported over a shaker to remove the water and small stones. Then the olives are crushed or ground to obtain a paste from which the oil can be extracted. The paste is put into a press, where a mass (oil, water solution) is collected, the water and oil are separated by a centrifuge, after which the oil is stored in steel silos and bottled. The process is called cold pressing because there is no heating.

Organic extra virgin olive oil is a beautifully aromatic, remarkably soft and fruity olive oil with a slight hint of pepper. This oil is very suitable for salads, but also for cooking. The acidity level is 0.4%. Vegetable fats such as olive oil contain more unsaturated fatty acids than animal fats.
