Origin and history Nutmeg
The nutmeg (nuces moschatae) is a spice that grows on the nutmeg tree in rain-fed tropical coastal areas. It was used as early as 1500 BC on the Banda Islands in Indonesia, where the nutmeg tree was native. The word nutmeg is a corruption of the Latin "nuces moschatae", which means "nuts smelling of musk". The nutmeg is oval in shape, about two and a half centimetres long and very hard: in the kitchen, the nutmeg is therefore only used in grated form (nutmeg). There is factory ground nutmeg on the market, but one can also buy nutmegs and grate it yourself with a nutmeg grater.
What can you do with nutmeg?
The Indonesian kitchen uses nutmeg in spicy soups and meat gravy. The Indian kitchen uses nutmeg not only for savoury dishes but also (in small quantities) on desserts. In the Netherlands we traditionally use nutmeg over green beans, cauliflower and spinach, and also in speculaas.
Use in moderation
Nutmeg contains myristicin, a substance which, when ingested in excess of 10 grams of nutmeg, has a hallucinatory effect.
