Origin of spring water salt
One of the best salts is spring water salt. Spring water salt comes from small salt farmers in Portugal, at the southern end of Porto de Mos Rio Maior. 200 million years ago, a primordial sea dried up. Underground watercourses washed the salt out of the rock as brine and flowed to the surface in springs. The brine is scraped from the surface with traditional wooden tools, sieved by hand and dried in the sun in large pyramids. Due to the amount of manual work involved, only 12 tonnes of salt are produced per year.
