For the Dutch, the nutmeg tree was literally worth its weight in gold during their golden age (VOC). The fruits of the nutmeg tree yield two different spices: nutmeg and mace. Mace is the dried seed coat of the nutmeg. Moreover, the Dutch ensured that the nutmeg trees grew exclusively on the Moluccas, which were occupied by the VOC, and were not exported to other places. This ensured a monopoly on mace and nutmeg.
Good qualities of mace
Mace contains the same healthy substances as nutmeg but some of them are present in higher quantities. They are vitamin B2, calcium, iron, copper and magnesium. Mace also contains vitamins A and C.
The use of mace
In the Dutch kitchen mace is used in the stewing of meat and in soups and as a component in spices. In Flanders, mace is used in dark flans and in Germany it is used to season White sausages. The French use it with fish.
