What is carob bean gum?
Carob bean gum is a white to yellowish-white, nearly odourless powder obtained by grinding the germinating seeds of the carob tree (ceratonia siliqua). This species is mainly found in the Mediterranean region. The carob tree grows up to 15 metres high. The crown is broad and semi-spherical, supported by a thick trunk with rough brown bark and sturdy branches. The carob tree is cultivated on a large scale, but also still grows wild in eastern Mediterranean areas. Carob trees can survive long periods of drought, but to grow fruit for the pith, they need 500 to 550 millimeters of rain per year.
What do you use carob gum?
It is used as a thickener in the food industry. A common application is the thickening of baby food to prevent problems with reflux (spitting) in infants. Flour from the seeds is not the only product from the carob tree. From the pods around the seeds carob powder is made.
