What are lentils?

The lentil is the legume of a crop that dates back to the 6000s BC. cultivated in the Middle East. The actual lentil is the seed of the plant Lens culinaris.

Green lentils

These are grown in Canada, U.S., Argentina, Chile and Turkey. We sell the well-known Laird lentils. These are teal in color.

Nutritional value

Lentils have the second highest ratio of protein to food energy of all legumes, after soybeans making them a good supplement for vegetarians, vegans and people who exercise a lot. What are lentils good for?

It is a perfect source of proteins. They also contain phosphorus, magnesium, folic acid and various B vitamins such as vitamins B1, B6, and B7. Lentils contain many healthy carbohydrates. One cup of lentils provides more than half of the Recommended Daily Intake (RDA) of fiber, and they are a great source of soluble fiber, some of which are considered prebiotic fiber.

How do you use lentils?

  • Lentils can be cooked without pre-soaking, but if you have some extra time, let them or pre-soak, because that shortens the cooking time (± 4 hours is a good pre-soak time).
  • Before use, wash the lentils and check for irregularities, such as small stones.
  • Lentils that float to the top after soaking are old; it is best to scoop it off and throw it away.
  • You can cook herbs and salt with the lentils from the start, then they give off their flavor best.
  • Bring the lentils to the boil over high heat and then let them gently cook until tender (15-45 minutes).
  • Lentils are extra tasty with a splash of red wine or vinegar. Only add wine and vinegar at the very end, because acidic ingredients can make the lentils hard.
  • Some lentils cook to a purée (including the red ones) and others retain their shape.
  • The cooking time of lentils depends on the variety: 15-45 minutes.
