While lavender is best known from the images of vast fields of row upon row of purple lavender plants in France, it is grown in practically the entire northern hemisphere where the soil is dry, sandy and well-drained and the weather is sunny.
Production Process Lavender Blossom
After harvesting, the stems are bundled and hung to dry. When the stems are dry, the blossoms are rubbed off.
What can you do with lavender blossom?
The blossom can be used for cooking. Lavender enhances both sweet and savoury flavours in dishes, but beware.... dry lavender blossom is more concentrated than fresh lavender. If using dried blossoms, halve the amount of fresh lavender to avoid a soapy aftertaste. Lavender goes very well with chocolate. A cup of it is very soothing before going to sleep. Or fill a bag with lavender and put it in your pillowcase.
