The history of speculaas
The well-known speculaas dolls were traditionally gifts by which men indicated their desire to marry the woman they offered the doll to. In the Netherlands and Belgium, this meaning has disappeared and been replaced by the tradition of giving 'speculaas'-dolls to children during the Saint Nicholas period. In Germany, however, this tradition still exists (lebkuchen). Speculaas is a biscuit made of butter, brown sugar and speculaas herbs. An official name is biscuit spices, because the ingredients used are not herbs but spices. Spices are often more intense in flavour than herbs and are made from other parts of plants, such as ground roots, bark or seed.
Speculaas spice applications
The spices usually used for speculaas include cinnamon, aniseed, cloves and a little cardamom. However, the composition is variable. There are ready-made products and it is possible to mix the spices yourself, as traditional bakers usually did.
