Juniper (Juniperus Communis) is a conifer from the cypress family. It occurs naturally in the Benelux and in the Netherlands can be found mainly in the Veluwe. The name Juniperus is derived from a Celtic word that means prickly. Juniperus is a thorny bush. Communis means 'common' in Latin.
The juniper played a role in prehistory. The pollen of the berries has been found in soil layers around the year 13,500 - 12,100 BC. The berries and seeds have been found in cesspools and this indicates the use of the berries as a spice.
Use of juniper granules
Juniper berries have a spicy, bittersweet taste. Because the taste of juniper berries develops slowly, they need to be cooked for a long time. These juniper berries have been ground into granules, which reduces the time it takes for the flavour to be released.
