Organic nutmeg for every type of kitchen

Nutmeg is a classic spice with a warm, spicy flavor that works in both sweet and savory dishes. From nutmeg tree to spice

Nutmeg originates from the Moluccas in Indonesia and is obtained from the dried seed of the fruit of the nutmeg tree, also known as Myristica fragrans. The fruits contain both the nutmeg seed and mace, so one seed yields multiple products.

Using nutmeg in warm and sweet dishes

Nutmeg is often used in small amounts. Because of its strong flavor a pinch is usually sufficient for mashed potatoes, cheese sauce, soups and stews. In Dutch cuisine nutmeg pairs well with spinach, cauliflower, green beans, cabbage and potatoes. Also in sweet dishes such as cookies, pastries and desserts the warm flavor is recognizable.

In Indonesia nutmeg is used in curries, soto and meat dishes with chicken or lamb. In India the nutmeg seed is included in garam masala together with cinnamon, cumin, cloves and other spices. For many dishes it's best to add nutmeg at the end of cooking so that flavor and aroma are preserved.

Whole nutmeg vs. ground nutmeg

Whole nutmeg has a stronger flavor and retains its aroma longer because the oil in the nut is better protected. Many professional kitchens therefore opt for freshly grated nutmeg with a microplane grater or a fine grater. By grating it just before preparation the aroma is better preserved in sauces, desserts and other dishes.

Ground nutmeg is especially convenient when speed and consistent dosing are important. The powder does lose flavor faster than whole nuts. Therefore store ground varieties airtight in dark jars and use a good rotation policy for maximum freshness.

Coarse or fine grind: difference in use and flavor

Coarsely ground nutmeg powder has a larger texture, which helps the aroma to last longer during cooking. This makes it suitable for stews, mashed potatoes and cheese sauce.

Finely ground nutmeg powder provides a more even distribution of flavor and is convenient for quick processing in a variety of dishes.

Ground mace

Ground mace, made from the dried seed covering around the nutmeg seed, has a more delicate aroma and a slightly subtler flavor. This spice is often used in soups, sauces and spice blends where a softer spicy note is desired.
