Dill (Anethum graveolens) is a herb from the umbellifer family that is native to all of Eurasia. Evidence of the use of Dill for human consumption dates back to 7000 BC. Fennel and chervil are from the same plant family. Dill has fine, needle-like leaves. It is an herb with a very refined taste.
How is Dill grown?
Dill can be harvested throughout the summer. The stems of the plant can usually be cut 8 weeks after sowing for use in the kitchen. Once dill starts flowering, the leaves contain most of the aroma and make the herb even tastier. To harvest, cut or trim the stalks with clean, sharp tools at about 5-10 cm above the ground.
Dill uses
The fresh, mild taste goes well with all kinds of fish and vegetables, such as cod and carrots. It is also delicious in soups, sauces, dressings, egg dishes and salads! Add dill only just before serving hot dishes, so that the flavour is not lost.
Healthy properties of Dill
Dill is rich in vitamin C. Tea made from dill seeds can have a (light) sleep-inducing effect and can therefore promote a good night's sleep. By using dill can also be the formation of excess intestinal gas countered, so one suffers less from flatulence.
