Origin of Green Coffee

Green coffee is coffee that is made from unroasted coffee beans. The cultivation of coffee beans dates back to around 1100 AD in the region of Arabia around the Red Sea. At that time, roasting of coffee beans was not yet practised. During the roasting process, the colour of green coffee beans changes to brown or light black. Green beans are still used today and especially in some forms of traditional Arabic coffee.
