What is Chervil?
Chervil is a herb whose name can be traced back via Latin to ancient Greek, where it means "leaves of joy". Chervil is used as a spice to season poultry, fish and seafood, soups and sauces. Chervil is a delicate herb, so use it only at the end of the cooking process. You cannot cook it. It adds a subtle aniseed or liquorice flavour to dishes.
Always readily available
A month and a half after sowing, chervil is 10 to 15 centimetres tall and can be harvested for the first time. Chervil will continue to grow after harvesting and can sometimes be harvested a second or even a third time. Chervil is the finishing touch to your dishes, but is also great in different soups. You often use it raw, for example in salads, as a garnish or in various starters.
