Organic coarse bulgur: the grain with a bite
This organic cereal product is made from pre-steamed, dried and coarsely milled durum wheat from Turkey. The larger grains give more bite than medium or fine bulgur and better retain their structure during cooking. That is why this variety is often used for hot dishes in which the grains absorb broth or sauce without becoming soft or mushy.
This organic bulgur is grown and processed in Turkey and is organically certified. Per 100 grams the product contains 12 grams of protein and 13 grams of fiber. Because of the firm grain it is suitable for both home use and professional kitchens.
What do you use coarse bulgur for?
Coarse bulgur really comes into its own in dishes where texture and a firm bite are important. It is a well-known substitute for rice and couscous. It is especially suitable for recipes in which the grains need to absorb moisture while remaining identifiable. This makes this variety a good choice for dishes that simmer for a longer time.
-
Pilav: absorbs broth and spices well, yet remains loose and grainy.
-
Kibbeh: works as a binder and gives the mixture more structure.
-
Spiced stews: keeps its shape during longer cooking.
-
Soups: adds substance without falling apart quickly.
-
Tabbouleh: gives the dish a firm, recognizable bite.
For tabbouleh you can soak the bulgur and then mix it with parsley, tomato, lemon juice and olive oil.
Preparing coarse bulgur
Soaking, recommended: put 150 grams of coarse bulgur in a bowl and add 3 deciliters of boiling water. Stir once, cover the bowl and let it soak for 15 to 20 minutes. During soaking the grains gradually absorb the water, which keeps them firm and separate. Drain any excess liquid or gently squeeze out. This method is suitable for, among others, pilav and tabbouleh.
Cooking: cook the coarse bulgur for 10 to 12 minutes in about twice as much water. Then remove the pan from the heat and let it rest for another 5 minutes with the lid closed. Fluff the grains with a fork before serving.
