Taste experience
Studies have shown that even among the Dutch there is a different taste experience. For example, people from the North and East will generally have greater acceptance for bitter than people from the South (under the rivers). This is directly reflected in the preference for beer, for example. Towards Belgium and France, there is a stronger preference for sweeter products.
Flavour steviol glycosides
The taste profile of the different steviol glycosides is slightly different from each other and differs from the taste of sugar. The taste of stevia and sugar is not really comparable. Because of this, people who have used sugar for years need a period of getting used to stevia extract. In general, the taste of stevioside remains longer in the mouth (aftertaste), tastes different from sucrose and can be experienced as more bitter than sugar especially at higher concentrations. With rebaudioside A (rebA) these disadvantages are experienced less than with for example stevioside.
Stevia extract bitter
Stevia extract is considered bitter by some people. Stevia has a completely different taste profile than sugar. Because of this, the taste is totally different. Due to years of sugar use, people have become accustomed to the specific sweet taste of sugar. Stevia has a different taste than sugar, a taste that Europeans cannot yet bring home. The first time that stevia extract is used, stevia extract may be experienced as "bitter" and has a different aftertaste. When using stevia extract for a longer period of time, one will get used to the taste just like sugar. We, therefore, advise you to use stevia extract a little longer and give it the chance of getting used to it.
Stevia taste development
The stevia currently available on the market is still under development. Because stevia is quite new for Europeans, the taste of stevia will be adapted to the preference of users in the future.
