Jamaican Jerk Chicken Marinade

Allspice recipe Jamaican jerk chicken for 4 persons

On the white beaches of Jamaica, chicken is roasted over a wood fire in the famous jerk chicken marinade. With this recipe you grill your own jerk chicken on the barbecue on hot summer days.

Ingredients

  • 8 chicken thighs
  • 2 garlic cloves
  • 1 bunch spring onion
  • a good piece of ginger
  • 1/2 onion
  • 2 chili peppers
  • 1 tablespoon allspice
  • 1/2 teaspoon thyme
  • juice of 1 lime
  • 1 tablespoon soy sauce
  • 2 tablespoons caster sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Preparing the marinade

Make a few cuts in the chicken thighs and place them in a baking dish. Place the rest of the ingredients in a food processor and grind fine. Do not add water, the marinade will become smooth on its own. You can switch off the machine in between and toss the mixture.

Pour the marinade over the chicken and leave it in the fridge overnight.

Making Jerk Chicken on the grill or BBQ

Grill the chicken thighs over an even heat for about 3 minutes. For an authentic Jamaican jerk taste, you can put some wood chips on the barbecue next to charcoal or briquettes.

Jerk Chicken in the oven

Preheat the oven to 200 degrees. Place the baking dish with the chicken in the oven and bake them for 45 minutes at 180 degrees.

 

Serve with hot sauce and rice.
