Small black lentils with a nutty bite
Beluga lentils are small, glossy lentils named after beluga caviar. They have an earthy, nutty flavor and retain their firm shape during cooking. These organic beluga lentils come from Canada and are SKAL-certified. Per 100 grams they contain more than 20 grams of protein and more than 15 grams of fiber, making them a valuable addition to a varied diet.
Cooking beluga lentils: 20 minutes, no soaking needed
Rinse the dried black lentils under cold water and cook them without soaking in plenty of water or broth. After 20–25 minutes they are done. Vegetable broth or a splash of red wine adds extra flavor. Drain them and mix warm with butter, coarse sea salt and black pepper.

Do you need to soak beluga lentils?
No, whereas this is normally standard for dried legumes, lentils are an exception. Rinsing and cooking immediately is sufficient. Check after about 20 minutes to see if the desired bite has been reached.
What is the difference with puy lentils?
Beluga lentils are smaller, darker and nuttier. Puy lentils are green-grey, slightly more peppery and also suitable for salads and warm dishes.
