Laurel leaves are around 5cm long and are used (usually dried). It is indispensable in all kinds of Italian pasta sauces. They are also often used in stews and soups, where the bay leaf has to stew for a long time to get its full flavour. The leaves cannot be eaten as they remain hard. Bay laurel is also used in bay laurel liquorice, which has a strong bay laurel flavour, and for the production of bay laurel oil.
